
Posted by penny Featherlight sponge. Line and grease two 20cm (8" 4 oz (125g S.R.flour) Sift flour, cornflour and baking powder together.Put aside. 180c 350f gas mark 4 for 15 minutes or until the cakes spring back when lightly pressed. cheers Penny.

This is a very simple sponge, light and easy.
sandwich tins.
1 tablespoon cornflour
1 teaspoons baking powder
4 tablespoons water
1 oz (25g) margarine
3 eggs
7 oz (200g)caster sugar
Place margarine and water in a pan and heat gently until melted.Put side.
Whisk eggs and sugar in a heatproof bowl over a pan of simmering water until pale and thick.
Remove from heat and whisk until cool.
Lightly fold the flour into the cake mixture.
Bring the water and margarine to the boil and pour into the the mixture
Fold lightly to combine.
Pour into prepared tins and bake in a preheated oven.
Turn onto wire rAck to cool.
Use as required.
