Potato Wine
1.8 kg old potatoes
6-8 litres cold water
1.4 kg demerera sugar ( not white sugar)
1 lemon and 1 orange sliced
1inch (2.4 cm root ginger)
1 oz. (25g) wine or bakers yeast.
Wash potatoes but do not peel.Cut into small pieces and put in very large pan. Add cold water NOTE ( If pan not large enough use little water and add as it boils down.)
Bring to boil
Boil until potatoes are soft but not mushy
Strain off liquid into a large bowl and add to it sugar, lemon, orange and ginger.
Stir until sugar dissolves.
Return it to pan and simmer for 30 minutes.
Leave to cool to 21C (70f) strain into a 8 pint (4.5 ltres) fermentaion jar.
Crumble the yeast andsprinkle into the liquid.
Fit an airock and leave until fermenting ceases.
Racking as necessary and then bottle and store.
Leave 6 months before drinking (hard to resist)]Very strong.
