Hope this suits your needs.
2 cups sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups grated carrot
11/3 cups veg or cooking oil
2 eggs beaten
1 cup choppped pecan nuts
1 cup drained pineapple. crushed (reserve juice)
2 teaspoons vanilla extract
1/2 teaspoon lemon extract
1/2 teaspoon almond extract
Add the carrot, oil, eggs and mix well.
Stir in pecans, pineapple and extracts.
Place in prepared tins.
two 9 x 5 x 3 size.
Preheated oven 350f. approx 1 hour.
Blend icing sugar with 2 tablespoons pineapple juice and drizzle over.
