RITZ CRUMB CAKE

3 egg whites, beaten
1/2 tsp. baking powder
1 tsp. vanilla
1 c. sugar
3/4 c. Ritz cracker crumbs
1 c. pecans, chopped fine
Sprinkle baking powder over stiff egg whites and add
vanilla. Gradually add sugar; fold in Ritz cracker crumbs and
pecans. Put in greased pie pan (9-inch). Bake at 300 degrees for 40
to 45 minutes. Cool and serve. Top with whipped cream.
RITZ CRACKER PIE

3 egg whites, beaten stiff
1/2 tsp. baking powder
1/2 tsp. vanilla
20 Ritz crackers, crushed fine
1/4 c. finely chopped walnuts
or coconut
1 pkg. frozen strawberries
1/2 pt. heavy cream
Add ingredients to beaten egg whites. Spoon into
buttered 9-inch pie plate. Use spoon to smooth bottom and
sides. Bake at 325 degrees for 25 minutes. Cool and refrigerate pie
shell. Thaw strawberries and drain juice. Pour into chilled
pie shell. Whip cream and cover pie.
ORANGE RITZ DESSERT

60 Ritz crackers
1/2 c. melted butter
1/2 c. sugar
1 can Borden's sweetened
condensed milk
6 oz. frozen orange juice
13 oz. Cool Whip
2 cans Mandarin oranges,
drained
Combine crackers, butter and sugar; pat into 9 x 13-inch
pan. Save a few crackers for top. Chill milk overnight. Whip
this about 5 minutes. Fold in Cool Whip and orange juice
(thawed). Fold in oranges. Spread on crackers. Sprinkle
crackers on top. I like to put a box of orange jello on the
crackers as it adds flavor. Refrigerate.
RITZ DESSERT

84 Ritz crackers
1 stick oleo
2 pkg. coconut cream instant
pudding (3 oz.)
1 1/2 c. milk
3/4 (1/2 gal.) vanilla ice
cream
1 (8 oz.) tub Cool Whip
Roll Ritz crackers fine, save 3 or 4 tablespoons to
sprinkle on top. Put crackers in glass dish; melt oleo. Pour
over crackers to mix, then press down in dish. In mixer put
pudding and milk. Mix well; add ice cream a little at a time
and mix thoroughly. Pour over cracker crumbs. Refrigerate.
Spread Cool Whip on top and sprinkle with reserved crackers.
RITZ COOKIES

1 large box Ritz crackers
1 can Eagle Brand milk
1 c. chopped dates
1 c. chopped nuts
Frosting:
4 oz. Philadelphia cream
cheese
3/8 c. butter
3 c. powdered sugar
1/2 tsp. vanilla
Cook milk and chopped dates until thick. After bubbles
appear, cook 5 minutes longer, stirring constantly. Remove
from heat; add 1 cup of nuts. On cookie sheet, place Ritz
crackers. Put part of mix on each cracker and top with another
Ritz cracker. Bake at 350 degrees for 8 minutes (do not overbake).
Make the frosting; beat until smooth. Cover crackers.
However, If You Want To Try The Traditional Ritz Recipe For Mock Apple Pie, Don't Serve The Pie Warm, Serve It Cool Or Cold. And Yes, It Tastes Fine With A Slice Of Cheese Or A Scoop Of Ice Cream... And It's A Perfect -- And Historic -- April Fool Joke.
Pastry For Two-crust 9-inch Pie
30 - 36 Ritz Crackers, Coarsely Broken Up (about 1¾ Cups)
2 Tsp Cream Of Tartar
2 Cups Water
2 Cups Sugar
Grated Rind Of One Lemon
2 Tbsp Lemon Juice
2 Tbsp Butter Or Margarine
½ Tsp Ground Cinnamon
Place Sugar, Cream Of Tartar And Water In Saucepan Over High Heat. Bring To A Boil, Then Lower Heat To Simmer For 15 Minutes. Add Grated Lemon Rind And Lemon Juice. Allow To Cool.
Preheat Oven To 425°f.
Roll Out Half The Pastry And Line A 9 Inch Pie Plate.
Place Coarsely-broken Cracker Crumbs In Pie Crust.
Pour Cooled Syrup Over Crackers. Dot With Butter Or Margarine And Sprinkle With Cinnamon.
Roll Out Remaining Pastry; Place Over Pie. Trim, Seal And Flute Edges. Slit Top To Allow Steam To Escape.
Bake At 425°f For 30 - 35 Minutes Or Until Crust Is Crisp And Golden.
Cool Completely Before Serving.

Ritzy Pecan Pie
Beat 3 Egg Whites Until Stiff, Gradually Adding 1 Cup Of Sugar.
Fold In 1 Cup Of Chopped Texas Pecans, 1 Cup Of Rolled Ritz Crackers, And 1 Teaspoon Vanilla Extract.
Place In Slightly Greased Pie Plate With Sides Higher Than Center.
Bake In 325°f Oven About 30 Minutes.
When Cool, Add 8 Oz Cool Whip Or Dream Whip.
Top With ¼ Cup Additional Texas Pecans And Refrigerate.
It May Be Served Immediately.

Preheat Oven To 325°f.

Beat Egg Whites Stiff, Then Very Gradually Add Sugar, Continuing To Beat. Add Vanilla.
Fold Egg Whites And Crackers Together.
Put In A Buttered 9-inch Pie Plate.
Arrange Pecans Across Top.
Bake 30 Minutes. Remove From Oven.
Sprinkle With Shredded Chocolate, Then Put Under The Broiler For A Few Seconds, Watching Closely So That The Chocolate Melts But Does Not Scorch.
Serve With Ice Cream Or Whipped Cream.

6 Oz Chocolate Candy Coating*
12 - 18 Drops Peppermint Oil Flavoring
36 Ritz Crackers
Melt Chocolate Candy Coating In Double Boiler.
Add Peppermint Oil To Taste Minty Enough To Your Liking.
Dip Ritz Crackers In Chocolate And Place On Waxed Paper To Solidify.
Note: You Can Substitute With 6 Ounces Chocolate Melted With 1 Tablespoon Vegetable Shortening.
Makes About 36.

3 egg whites (beat until stiff)
1 c. sugar
1 tsp. vanilla
Fold in 3/4 cup nuts. Add 20 Ritz crackers, crumbled fine. Pour into well greased pie pan. Bake 30 minutes at 325 degrees. Will make 2 thin pies.
If 1 large pie is made, bake for 45 minutes.
