The longest build was my model of the French battleship Jean Bart, which started out as her sister ship Richelieu. I had to increase her beam and after fits of stopping, restarting and stopping,I finally finished it last year. I took 26 years to finish what I started in 1997. Thankfully, I lived long enough to finally finish that model.
How long per day? "As long as I have." I am retired, but work part time afternoons. I might have a couple of hours on a work day morning with no other pressing chores, and be in the mood to build. Or, I might wake up on a weekend off with no other more pressing chores, and be in the mood, and spend all day.
I suppose my longest build would be the ship I have left unfinished the longest. My JAG California CGN. Don't remember when I started it, but I am sure "decades" is an accurate word.
Longest completed build is likely my Italeri Ronald Reagan CVN. The box said it was GHW Bush, and I started it happily enough. Shortly into it, I found it was actually just a reboxed Reagan, and the differences between the two actual ships were "major surgery" for this OOB guy. I spent some time assessing whether I felt it was even feasible to do the conversion, then more time assessing whether I wanted to bother with the conversion. A couple of years or so later, I finally decided I could live with the Reagan after all, so the kit got completed.
