I agree that it is likely that just about every live Polaris shot we've ever seen was probably a training or test round, and probably wore the special markings for optical tracking, which would be a non-issue when fired in anger.
In my experience, "warshot" rounds of tactical missiles were always in nondescript markings, like all-white with appropriate warhead markings and stenciling or, later, tactical grey. (My experience is limited to SM-1/SM-2 SAM or aircraft-carried weapons).
