You don't need to change the studs, just get the Carb to manifold gasket for a '79. It will be as thick as the heater.
A side note on the subject of carb icing. The only thing on a Chevette that prevents it is the heat riser on/from the exhaust manifold. If you live in a climate where icing can happen you'll want to keep this intact and working. I've had the vacuum switch on a couple cars stop working as well with age. If you pull the plastic cover off of the switch there's a adjustment screw hidden in there, a slight tweak will usually get it working at the right temperature again.
