Sounds like a cool project. Can you share some pics or a link to a build page?
I did some quick google and I wasn't able to find any flow or pressure specs on the pumps. I will admit my google-fu is terrible though.
I looked on Rockauto at the pictures of the different pumps. From a visual stand point the Chevette and 2.5L S-10 pumps look kind of close. The reservoir inlet and mounting bosses are different, but the basic shape of the pump seems close. The 2.8L S-10 looks to have the good old "Canned Ham" Saginaw pump.
Seeing the 2.8L pump got me to google "Canned Ham" to get the proper name of the pump. It also turned up this Hot Rod article that may be of use to you:

I think this article ends up answering your question. The S-10 from looking at Rockauto uses a steering box while the Chevette piece is a rack and pinion. According to the article you may need to find a way to turn down the S-10 pump.
I don't have time to find a link right now, but there are some people that have put Chevette power steering racks in Fieros. You may want to look into how they are going about it.
