Yes, you can.
By doing pool play on Saturday in 7-man, your 4-man games will not be affected by the 7-man schedule. The most likely scenario is your 7-man games will play early in the morning, before you start your 4-man schedule.
What about 5-man? Because I will be handling the single elimination schedules for the 7-man tournament and the complete 5-man tournament, I will guarantee that there will be no forfeits due to conflicting game times. The fields are side by side, and you may have to hustle from one to the other, but playing in both styles will be encouraged and the officials will have leeway to allow for teams moving from place to place.
