I'm actually happy that you posted your message of your disappointment with the cornmeal pudding recipe. I tried it once with no success either and then had to send them an e-mail where I received clarification. (I recently made this pudding 4 days ago and it was a big success). The grated yams refers to American sweet potatoes(which are orange in colour). When you grate them, use the "nail" side of the box grater so that it comes out mushy (not shredded). Do the same for the carrots and add the accummulated liquid to the rest of the dry ingredients. You can also make a topping by mixing 1/2 cup of coconut milk with 4 tablespoons of brown sugar and a dash of vanilla and cinnamon together and pour it directly over the pudding before baking. This keeps it moist. It requires almost the full 1 1/2 hours to bake. Good luck.
