She points out that dried beans take less room
to store. Cooked beans swell to 3 times. You can get by with
maybe a dozen jars.
Put six quart jars in big pot with lid.
In each jar put one cup beans
(six different kinds if you wish)
Fill to top with water.
Let beans soak 24 hours.
Pour water beans soaked in into pot.
Fill each jar with clean water.
Put lid on pot.
Bring pot to a boil.
Cooking time:
Lentils 45 minutes
Rice 1 hour
Beans 2.5 hours or until tender.
..........................
Alternate method if fuel is limited.
As above, but after pot boils 5 (or 10?)
minutes remove pot from fire.
Cover pot with numerous sleeping bags.
If you wish, let it all cook 2.5 hours.
Lentils and rice will be overcooked but
that does no harm
At 2.5 hours if beans are not tender,
place pot on fire and bring to boil. Remove
from fire. Cover with sleeping bags.
Later (she did not say how long to wait) beans
will be tender.
