Actually there is a manufacturer out there that does make a decked inflatable kayak with a rigid cockpit. They are know as a Sally.
These are used extensively for Class V runs, they can be rolled though a bit more challenging. See their website http://www.inceptmarine.com/k30x-whitewater-inflatable-kayak.htm Price is $1,550
These boats have been around for a number of years now (SHAME on NOC for not knowing about them).
I have paddled with a couple of very well known New England creek paddlers that use these on a regular basis for a couple of runs. The most notable being Cascade Brook in The White Mountains.
I can attest to their durability as well as their handling.
