A Cane (from what I've heard from someone who has had both) is more "needy" for lack of a better word. They are under your feet everywhere you go in the house. If you leave the room, they follow on your heels.
The presas generally, are more self contained. If they follow you out of a room, it's more out of curiosity about where you're going, and they might not go all the way with you. They're fine being a little more aloof and tend to be mroe confident.
Also the presa tends more towards dog aggression then the Cane generally.
The one thing that would concern me when considering the Cane is the recent explosion of "breeders" in the past few years. As I understand, they're working towards AKC acceptance, and the number of breeder ads and websites have tripled since we were first introduced to the breed about 10 years ago.
So in either breed you look at, ask if the hip test, if they participate in any events with their dogs, belong to any breed clubs, and detailed "what if" questions about their guarantees.
I have a list of questions to ask presa breeders on my site, that can also be used for Cane's. I confess I borrowed them from another breed, and changed some things in it...but I think it can be applied to any breed you're looking for.
