Hi DeeDee....long time no see!! Carol from Kamloops here.....Guess the last time we were in touch was during the fires of 2003!
Just wanted to let you know how wonderful your Carrot Cake Muffins are. Just had one & I must comment on how moist they are!
I'm not a fan of raisins so I used chopped dried apricots instead...very nice!Also made a thin glaze & drizzled each muffin with a little bit.
