After a recent study of "throat hooked fish", the hooks now-a-days don't rust like the old ones did. A high percentage of fish released with the hook in the throat actually die as a result. There is a way however, to take it out of the throat with minimal stress and damage to the fish. Push the hook in the throat farther and unhook it from the side of the throat and pull it out slowly while pushing towards the opposite side so you don't re-hook the fish. It's tough to do, but barbless hooks help a lot.
