Certified Judge & still a novice backyard cooker. I notice all the pros us anamebrand bricket. I'm told its for heat control & lasts longer than lump. Should or can I use them in my ceramic cooker or should I continue with the recommended lump?

You never want to use a charcoal brisket in a ceramic cooker. The chemicals/products used to form the brisket permeate the walls of the ceramic cooker and leave that "charcoal" smell. Mike Horne, Big Green Egghead.

Mike has meat on his brain. If you have a charcoal "Brisket" you've left in the smoker way too long!!
