Newbie, seeking advice on what equip to meet health codes

Hi all,
My friends and I are thinking about entering some of these BBQ competitions. I'm trying to find out what equipment I'll need to meet the DHEC health regulations? I know coolers and ice to keep the meat cold prior to cooking. But what else? Is a potable water source provided at each station? So we can just bring a potable water hose? What about electricity at each station, etc?

All SCBA events have potable water within a hose length or two, of all cook sites. 99% of all events provide power within an extension cord or two of each site. Events not providing power will state that on their application forms. Now, back to DEHEC. You will have to have a meat thermometer, food service gloves to wear any time you are handling the meat, a cover over any area where you are prepping or serving food, a Clorox/water solution to sanitize the food prep area, and there is more. DEHEC has a pamphlet that can be downloaded from their website that tells all. The best thing to do is when you decide on a contest post some questions about that particular contest. I will almost bet that you will have an experienced team that will volunteer to mentor you through your first contest or two. If it happens to be an event we (Bold Branch)are cooking we will be most happy to guide you through it. I have never run into a cooker that was not anxious to help a new team get started.
