My suggestion to all chicken judges or any other judges for that matter is to break the meat apart with your fingers before putting it in your mouth. This way most of the time you can tell if it is undercooked, after you have put undercooked meat in your mouth it is hard to spit it out good enough to feel better. Bbq can be touched without breaking it.
