    Pasta Primavera ---

    Large serving for 1 lb of pasta ----


    1 package of Penne or any tube pasta...bowtie can work... I don't like Linguine or Spaghetti with it..but any type of pasta will function.


    1 Green pepper (or any color of bell pepper...can even mix peppers..)

    1 med onion chopped..

    1-2 small zucchini chopped..

    1-2 carrots chopped..

    1 stalk of celery chopped..

    2 cloves of garlic chopped...

    Basil and oregano -- in this case I like the dried ones better than the fresh. So as not to dominate.

    (Broccoli, maybe spinach, maybe peas...and other veggies can be added to this...)

    Chop the vegetables you desire to use....

    In a large skillet or even a wok... cover bottom with olive... heat on high until olive oil is ready to fry. Place the cloves of garlic in the olive oil. Let heat until garlic is browned and the kitchen is all fragrant with garlic. Take garlic out with spoon.

    Place chopped veggies in the heated olive oil....

    Cook until they are somewhat softened but retain their crunch.

    Meanwhile -- have a pot of water boiling and ready for the pasta.

    Cook the pasta - al dente. It's a sin to make pasta mushy and God will not be happy with you if you serve pasta that has been over boiled. (Just a bad joke..but cook the pasta al dente) Al dente means "By the tooth". It means that the pasta is soft enough to eat, but must still be able to be chewed.

    Drain al dente pasta..

    Mix in frying pan the pasta and vegetables. If dry...add a little extra olive oil. Heat the mix of pasta and vegetables...stirring until it all has been heated.

    Add oregano, basil ... Place in large bowl... serve with Parmesan cheese...

    Voila! Buon Apetito!
