The initial bedding is to "gas off" the pads, supposedly to release the binders in the pad material.
The rear shoes will take a bit of driving to get fully bedded.
When the handbrake gets higher, you, or the lucky new owner, will know they're bedded and it's time for adjustment, which will also raise the pedal height.
