My understanding is that depending on the offset, the 6" wheels will fit under stock bodywork if the lips on the fender arches are rolled.
You might want to look at the specific rules for where you plan to do most of your racing. Also, there is a Triumph racer group called Friends of Triumph (FOT) which is a wealth of info for Triumph racers, though as you may not need it if you've been racing your car since "back in the day".
Most vintage is like any other racing group - people generally conform to the rules, but want to be fast, too. Most organizations tend to look for general conformance and also to the spirit of the driver and his/her behavior on track. If you drive well and aren't a jerk out there, no one is going to boot you out over minor inconsistencies with the car, unless you are trying to compete in events like the Monterey Vintage Historics, etc.
