I agree, unless you know that the head is stock thickness, a quoted amount of removal will be little more accurate than a best guess.
Another point is that the depth of the valve heads in the seats, and also the type of valve head, will affect the chamber volume.
It's best to establish your "valve job", and then measure cc.
