Pour either Veg oil, Olive oil in the pot just enought to glace the bottom of the pot. Chop very fine Cilantro, culantro, green pepper, onion, and garlic add them to the pot let it simmer I also add piece of cooking ham add pinch of Adobo, powder garlic, onion, cummin and oregano. Let all these ingredient simmer or saute add green olive once this saute for about 4 to 5 minutes add 1 can of your desire Goya bean or Puerto Rican famous Gandules (pigeon Peas) let it saute for additional 4 to f minutes. while these ingredients are cooking rinse 3 to 4 cups of rice I prefer medium grain Vitarros or Goya rice. Once clean add it into the pot stir it on high for about 1 to 2 minutes then add 4 1/4 cup of water stir again add salt to your taste. Cook on high but watch carefully until you mixture begins to dry once its start gettin dry lower the heat to medium. Very important do not stir the rice too much it will turn muggy and that is no good I prefer my rice dry soft and flaky. Once you turn the heat to med I stir it once and I let it cook within 1/2 hr my rice is done.
The ingredients I use are always fresh some of us PR we also use the frozen Sofrito.
We take the above ingredients put them in the blender add a little oil and once we liquify them we save them in a container and reuse it for other dishes.
