Okay Catherine, Here is the famous Grouper Sandwich for you. I know that the Full Moon Saloon is no longer around for this great sandwich. However, you can get it at Sloppy Joes.I have this recipe in my Key Cusine Cook Book.
This was served opened-faced, with macaroni salad, lettuce and tomato on the side.
Moon Fish Sandwich
1/4 pound grouper fillet
1 tsp. lime juice
1 egg
1 tablespoon buttermilk
1/4 cup beer
2 tbls. flour
2 tbls. cracker meal
oil for frying
1 sesame roll
1 tbls butter
1/4 small onion, sliced
4 mushrooms, sliced
1 slice cheddar cheese
1 tomato, cut into wedges
lettuce
1 pickle, sliced
Sprinkle the fish with lime jucie. Combine the egg and buttermilk in one bowl and the beer, flour, and cracker meal in a second one. Dip the fish in egg wash and then batter. Heat the oil in a deep fryer to 350 degrees and fry the fish for 3 to 4 minutes until golden brown. Open the roll and place fish on both halves.
Meanwhile, melt butter in a skillet and saute the onion until transparent. Add the mushrooms and continue to cook for several minutes. Place the mushrooms and onions on the fish and top with cheese. Place under broiler to melt cheese. Serve open-faced on platter with a garnish of pickle, tomato wedges, and lettuce.
Makes 1 sandwhich.
