I grew up with Arabs in Pony Club - meaning we fox-hunted, jumped, did dressage, and all the rest. My mother also evented a purebred Arab gelding at the preliminary level. You might check out Arabian Sport Horse sites. Arabs are very atheletic and fun to do all the jumping, eventing, hunting on.
Training the horse to gun fire might require help from either a local re-enactment group or police force if they have mounted patrol units.
