Honestly, with those stats you probably already have a good shot at getting an interview. If you think you could get a score on the GRE that would be comparatively be better than your MCAT one, you could try that.
I gained admittance into a program without a double major, no minor, and less overall shadowing (although I had a large amount of anesthesia shadowing).
Since you didn't elaborate on what your shadowing is in, I am not sure how many anesthesia hours you're at. I recommend making sure you have a good amount of shadowing specifically in anesthesia, since that is the goal, after all.
Like I said originally though, with what you've stated, I would say you likely will get an interview.
Thank for your response. I have 1 week in OR, 1 week in Oncology department, 1 week in ER and 1 week in Urgent care. However, I can only think of 1 day shadowing an anesthesiologist. That being said, I didnt even find out about Anesthesiologist Assistant field back then and no way to get the 8-hours minimum paper filled out. I think I will have to shadow an anesthesia provider again. Do you think if I submit my application this July is consider late? I don't know when application is considered early or late.
