As a matter of fact, the Nova curriculum has courses in writing. They want AA's to start writing for publication and encourage it in the Nova program. Right now CRNA's have that advantage over us; they write A LOT. So they are trying to encourage AA's to get published and write to get recognition around the US. They want you to get as much as you can out of this career as you can and writing is one way to do it. As for flexibility you will get to try a variety of surgical specialties including thoracic, cardiac, OBGYN, neuro, vascular, orthopedic, gastrointestinal, etc.
