I agree with FutureAA and I mentioned this in one of my previous posts. The school wants you to observe in order to asses what the AA is all about in a nutshell. No admissions committee would require 2000+ obs. hours, like you said, which is close to what schools require for clinicals. Although it obviously will not hurt your learning curve if you got accepted, the observation is there for you to figure out if that is what you want to do as a career. The school wants the task to mold you as an AA, not the person you shadow. It seems like you've done some research and i'm sure you know how much work it will require to complete your bach. w/ pre-reqs. So put your grades as a top priority and spend the extra time doing organic chemistry practice problems (TRUST ME!) than worrying about extra shadowing hours.
