There is a book The Phantom Fleet which covers the WW1 and WW2 merchies mocked up as warships, plus HMS Centurion as a KGV. This has a few photos but no plans. However, IIRC all mock-warships were of dreadnoughts - more useful to obfuscate their locations than any pre-D.
There was an article (with a plan?) in one of the magazines quite a few years ago - maybe Model Boats - for one such conversion. I used to have both of these but they burnt down with our house in 2003 Canberra bushfire.
